We are dedicated to providing world class coffees fresh roasted in store. The process starts with the selection the raw, or "green" beans. We meticulously sample lots from different importers to ensure we are ordering the best beans in the world. Once the beans arrive at our store, we begin sample roasting to find the ideal profile which will bring out the best characteristics of the beans. With our blends the process doesn't stop there - the coffees are combined with a vision of the end product in mind, and proportions are adjusted throughout the year as different lots of the same varietal of beans produce slightly different flavors. This process allows us to bring you the best coffee in the world, right here in Rockwall, Texas.

Our baking follows the same philosophy. All of our baked goods are prepared fresh from scratch - no mixes, no heating of frozen products. Each day Meredith is busy baking all of your favorites - Mrs. Texas Roast's Soon to be World Famous Chocolate Chip Cookies, Texas Sized Blueberry Muffins, Banana Nut Bread, Crumb Cake, and Biscotti. She also prepares fresh, homemade Apple Pies to order.
